A T-bone steak is a type of steak that comes from the beef short loin, a section of the cow that is located near the middle of the animal's back. The T-bone steak is cut from the front end of the short loin, and it gets its name from the T-shaped bone that runs through the center of the meat.
One side of the T-bone contains a tenderloin, which is a long, narrow muscle that is very tender and has a mild flavor. The other side contains a strip steak, which is a broader, more muscular cut with a rich, beefy flavor. The T-bone steak is often considered a classic steakhouse cut and is typically cooked by grilling or pan-searing to medium-rare or medium doneness.
