BBQ corn with chilli, lime and herb butter



  • 4 corn cobs
  • Pinch dried chilli flakes
  • 50g unsalted butter
  • Zest of 1 lime
  • 1tsp lime juice
  • 2tbsp fresh coriander, chopped
  • Sea salt and freshly ground black pepper


  1. Preheat the BBQ.
  2. Soften the butter and stir in the other ingredients until well combined.
  3. Place corn cob on a double layer of foil and brush generously with the butter mixture. Roll up foil to ensure parcels are sealed.
  4. Cook parcels on a grid over BBQ for12-15 minutes turning occasionally until cooked through.
