Sew & Sew - Fiano - Sashiko - Adelaide Hills, SA
Harvested in the early hours of the morning, the grapes were delivered to the winey at 6:00am for pressing. The juice was settled and fermented in stainless steel and left on fluffy yeast lees which were stirred intermittently between fermentation and bottling in late October. Lees stirring helped to build texture and creaminess in the wine. This season we put some wine to barrel in mature oak for six months which adds lovely notes of early ripened nectarine.
This Fiano is intensely flavoured and aromatic. The nose is of apricots, lifted with hints of florals, citrus and nectarine. Firm acid frames the fruit giving presence and depth. Chalky minerality is underlain with a dash of honey and spice to finish. A beautifully bright and textural wine, with great length.
