Four Pillars Olive Leaf Gin 

Olive Leaf Gin is made using olive leaf and olive oil sourced from Cobram Estate, in northern Victoria.  Olive Leaf Gin is a deliciously savoury gin, perfect for a dirty martini or Spanish-inspired gintonic served in a wine glass with a sprig of rosemary and slice of lemon.

Olive Leaf Gin is there new savoury gin, five delicious years in the making. It’s textural, bright and perfect for a Martini or Gintonic. We’ve used three types of cold-pressed extra virgin olive oil and olive leaf tea from the world-class groves of Victoria's Cobram Estate. Botanicals like rosemary and bay leaf transport you to the Mediterranean, while native macadamia nuts and lemon myrtle make the gin distinctly modern Australian.

The genesis of this gin was back in 2015 when they distilled a little drop called Cousin Vera’s Gin.Made with there friends at Santamanía Destileria Urbana in Madrid, this was the first gin in there Distiller Series. It was also was there first foray into savoury, Mediterranean-inspired gin flavours using fresh olives and rosemary. Cousin Vera’s Gin came and went pretty quickly, but remains a cult classic in the Four Pillars canon for those who crave that savoury style.

After that collaboration, we knew gin and olives would combine beautifully and a trip to the olive groves of northern Victoria confirmed it for them. It was after visiting Cobram Estate in Boundary Bend during olive harvest that they realised olive oil could be a brilliant botanical alongside dried olive leaves. The aroma, flavour and texture of fresh olive is stunning, so they did an entire year of trials before finalising the recipe. The result is a completely delicious, savoury and bright gin.
