Sticky Pork Ribs - with Rice & Asian Greens

COOKING INSTRUCTIONS

    1. Give all your vegies a little wash. Preheat oven to 180°. Peel the ginger and finely grate. Mince the garlic and add to a large bowl with sweet chilli sauce, rice wine vinegar, hoisin sauce, plum sauce, light soy sauce and Chinese 5 spice. Whisk together well.

    2. Open packet of ribs and pat dry well. Add ribs to the bowl, toss well and marinate for at least 10 mins. Place on a baking tray lined with baking paper, reserving the marinade left in mixing bowl. Cook in the oven for approx. 50 mins (in two 25 minute intervals).

    3. Meanwhile, add the remaining marinade to a small pot and bring to the boil. Reduce heat to low and simmer for approx. 15 mins, remove from heat. After the ribs have cooked for 25 mins, remove from oven and spoon some of the glaze over the ribs. Place ribs back in oven for another 25 mins.

    4. Add rice and 2 cups of water into a medium size pot. Bring to the boil while stirring regularly then reduce heat to low. Cook for approx. 3 mins before placing lid on pot and cooking for another 15 mins. Remove from heat and brush the rice with a fork to release steam, rest for 10 mins.

    5. Bring a large pot of salted water to the boil. Blanch the Asian greens for approx. 3 mins, drain well.
