You want some of this pork on your fork. Who doesn’t love roast pumpkin? Add fennel cream (yup, it’s a thing), and a bit of feta. It’s comforting, a bit fancy and perfect for company. Might be time to break out the good cutlery!

 

COOKING INSTRUCTIONS

    1. Give all your vegies a little wash. Preheat the oven to 200°C. Pat dry the pork then pick thyme leaves and roughly chop. Drizzle chops with olive oil, season with salt and pepper, ground fennel seeds and chopped thyme, rub well. With a damp cloth, wipe the skin of the pumpkin to remove any dirt. Using a spoon, remove seeds. Cut the pumpkin in half and carefully slice into 1 cm thick wedges. Peel the Spanish onion and cut into thin wedges.
