Pork belly, quick pickled cabbage, lots of green, plus crackling - this dish has it all. BTW, is there anything better than crackling?

 

COOKING INSTRUCTIONS

    1. Give all your vegies a little wash. Preheat the oven to 200°. Rinse the split peas and drain. Roughly chop onion, garlic and fennel. Pick leaves from thyme, discarding stems. In a medium size pot on high heat, drizzle olive oil and cook onion, garlic, fennel and thyme for approx. 5 mins until golden. Add split peas and cook for approx. 3 mins, stirring occasionally. Add 3 cups of water, bring to the boil then reduce heat to low, cover with lid and cook for approx. 45 mins, stirring occasionally.

    2. Remove pork from packaging and pat dry with a paper towel as well possible. Rub pork with a half tbsp of fine salt. After 5 mins, wipe off the salt and pat dry again to remove as much moisture as possible. Flip the pork and rub the smoked paprika and ground fennel seeds on the flesh side only. On a baking tray lined with baking paper, place pork belly skin side down. Cover with another layer of baking paper then place a heavy ovenproof weight on top to weigh down. Cook in the oven for approx. 1 hour.

    3. In a small pot, mix sugar and vinegar. Bring to the boil, remove from heat and let cool. Slice red cabbage as finely as possible. Add to a mixing bowl with the vinegar syrup and toss through well. To pickle the cabbage, cover with a sheet of baking paper and press down firmly to remove air pockets from bowl, ensuring cabbage is fully submerged in the vinegar syrup. Leave sheet down and place in fridge.

    4. Check split peas, ensuring they are soft. Using a blender or stick blender, blitz the split peas and ¾ of the spinach leaves into a smooth puree. Check seasoning, adding salt and pepper to taste.

    5. After 1 hour, remove pork from oven and turn skin side up. Change oven function from the baking setting to grilling. Without the weight on top of the pork, cook in the oven for 10-15 mins, checking regularly, until skin is bubbly and crispy. Meanwhile, quarter zucchini lengthways. In a hot frying pan on high heat, drizzle olive oil and sear zucchini on all sides for approx. 5 mins until golden.
