Maple Glazed Pork Fillets - with Cauliflower Puree & Roasted Brussels

Has anyone ever said maple-glazing was a bad idea? It's time to give pork fillets some sweet love. Add to that a bed of creamy cauliflower puree and some roasted Brussels, and dinner is served.

 

COOKING INSTRUCTIONS

    1. Give all your vegies a little wash. Preheat the oven to 180 degrees. Cut cauliflower into large florets and add to a pot of salted water. Bring to the boil, reduce heat to low and simmer for approx. 20 mins.

    2. Remove pork from packaging, pat dry and cut each fillet in half. In a mixing bowl combine maple syrup, mustard, sumac, salt, pepper and a drizzle of olive oil, mix well. In a baking tray lined with baking paper, place pork and cover in the marinade, rub well. Bring a medium-size pot of salted water to the boil (for the broccoli).

    3. Cut Brussels sprouts in half. Drizzle with olive oil, verjuice and brown sugar. Toss well and place in a baking tray lined with baking paper.

    4. In a hot pan on a high heat, drizzle olive oil and sear pork on all four sides for approx. 30 seconds, ensuring pork does not burn but caramelise. Place pork back on baking tray and cook in the oven for approx. 15 minutes. Place Brussels sprouts in oven and cook for approx. 15 minutes.

    5. Drain cauliflower and place florets in blender. Add butter, season with salt and pepper and blend until smooth. Cut broccoli into small florets and place in boiling water for approx. 4 minutes. Drain and refresh with cold water then roughly chop.

    6. Remove pork and Brussels sprouts from oven and rest. Finely slice garlic and roughly chop sage. In a hot frying pan on high heat, drizzle oil and sauté garlic and sage for approx. 2 mins. Add chopped broccoli, juice of half a lemon and season with salt and pepper, toss through. Slice pork into half centimetre slices and serve with cauliflower puree and roasted Brussels sprouts. Consume within 48 hrs.
