How great is San Choy Bow? All your favourites have come to the party; we’re talking about iceberg lettuce cups, water chestnuts and a golden chicken filling to wrap your hands (and mouth) around. Lazy Susan not included.

    1. Give all your vegies a little wash. Finely chop garlic, ginger and onion. Finely slice shallots and chilli (removing seeds if desired). Pick leaves from coriander and finely chop the stalks, set both aside. In a hot wok, drizzle grapeseed oil then add ginger, shallots, garlic and onion and cook for approx. 5 mins until golden. Add chicken mince and cook for approx. 5 mins, stirring regularly to break down the mince.

    2. Devein the sugar snap peas from top to bottom with a small knife. Do this on both sides of the sugar snaps. Set aside.

    3. Drain water chestnuts well. Add to a food processor and pulse until coarsely chopped, without overworking. Otherwise finely chop water chestnuts using a knife. Add chopped water chestnuts to wok with soy sauce, rice wine vinegar, sesame oil, sweet chilli sauce, oyster sauce and reserved coriander stalks. Cook for approx. 2 mins, stirring regularly. Add sliced chilli and juice of 1 lemon and cook for approx. 5 mins.

    4. Remove the first layer of leaves from lettuce and discard. Place lettuce on chopping board with stem facing upwards. Press down hard on the stem, then remove it from the leaves by twisting it out. Very carefully, start to peel leaves off one by one, ensuring not to rip any.

    5. Add bean sprouts, sugar snap peas and coriander leaves to wok and toss through.
