Braised Lamb Leg - with Wombok & Ditalini Pasta

Sometimes, good food takes time. In this dish, tender lamb, silky wombok, sweet caramelised leeks and pasta tick all the comfort food boxes. And our good friends dill and lemon bring the zing.

 

COOKING INSTRUCTIONS

    1. Give all your vegies a little wash. Preheat to the oven to 160 degrees. Slice garlic, leek and shallots. In a large ovenproof pot (dutch oven) on medium-high heat, drizzle olive oil and add garlic, leek and shallots and cook for approx. 5 mins until golden, whilst stirring regularly. Remove from heat.

    2. Cut lamb into 2.5cm chunks and season with salt and pepper. Add to a mixing bowl with the flour and toss well. Place lamb into a sieve or colander and shake well to remove excess flour.

    3. In a frying pan on high heat, drizzle olive oil and sear lamb for approx. 5 mins, turning until golden on all sides. Cook the lamb in two separate batches to ensure pan is not overcrowded. Add seared lamb to the pot with onion, leek and garlic. Then in the lamb frying pan, add 1 cup of stock whilst hot to deglaze, then pour that stock into the pot. Add the remaining stock to the pot and bring to the boil, then reduce heat to low.

    4. Meanwhile, prepare the cabbage by removing the first outer layer and discarding. Finely slice the cabbage and discard the hard stem.

    5. Add cabbage to pot and mix well. Chop dill leaves, discarding the stems. Add all the dill but a small handful for garnish to the pot and mix well. Once it comes to the boil, put the lid on and place in oven for 1.5hrs. Closer to the end of the lamb cooking time, bring a pot of water to the boil. Cook pasta for 9 mins or until al dente, then drain. Drizzle with a touch of olive oil and toss through.

    6. Remove lamb from the oven. Scoop out the excess top layer of fat from pot and discard. Add the juice of one lemon and stir through. Serve with pasta and garnish with the reserved dill. Consume within 48 hrs.
