Creamy Roasted Tomato & Basil Soup


This deliciously creamy soup makes the perfect winter warmer for those chilly mornings.

Creamy Roasted Tomato & Basil Soup


  • 6 Roma or Egg tomatoes, sliced lengthwise
  • extra virgin olive oil (for drizzling)
  • 2 tablespoons unsalted butter
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 1 tablespoon fresh thyme, minced
  • 2 400g canned crushed tomatoes 
  • 2 cups basil leaves, roughly chopped
  • 2 tablespoons dried basil
  • 1 tablespoon sugar
  • 2 cups chicken stock
  • salt and pepper
  • 2/3 cup heavy cream
  • Fresh basil for garnish, chopped


        1. Preheat oven to 190°F. Prepare a baking sheet and spread tomato halves.  Drizzle with olive oil, season with salt and pepper, and roast tomatoes for about 1 hour.
        2. While tomatoes are in the oven, melt the butter in a large pot over medium-high heat, add onion and sauté for 5 minutes. Then, stir in the garlic and thyme and sauté for another 5 minutes before adding crushed tomatoes, basils and sugar. Season with salt and pepper.
        3. Stir the mixture and reduce the heat to medium or medium-low and simmer for 10 minutes, covered, before pouring stock and roasted tomatoes into the pot. Season with salt and pepper.
        4. Continue to simmer soup, covered, for about 30 minutes, stirring occasionally.
        5. Carefully pour soup into a blender and blend until smooth. Pour soup back into the pot and stir in the cream until fully incorporated.
        6. Simmer the soup for 3 more minutes before placing into bowls. Sprinkle chopped fresh herbs to serve.


        TIP: If you don't have canned crushed tomato available, you can always go with pulsed whole or diced canned tomatoes via the food processor.
