My pick of the week is Imperfect purple sweet potato. This purple skin, white fleshed variety is also known as the Japanese sweet potato. This variety of potato is quite a bit sweeter than most other variations; I love to bake it or use it in a mash!
For me, it’s very different to Kumera, and in our family we will put both in a roast to celebrate the different, but delicious flavours profiles each has to offer. Imperfect purple sweet potato is generally much dearer than Kumera, but this week it’s on at a bargain price! - David Harris.
HOW TO PICK
Choose potatoes with firm, smooth and even skin. The deeper purple colour of the potato, the richer it is in antioxidants.
HOW TO STORE
Store in a cool, dry place, in or out of the fridge.
