Zucchini Pasta with Asparagus, Peas and Dukkah

 

Zucchini Pasta - Foodie Winner

Try spiralising zucchinis to make vegetable pasta and remove the carbs, for a delicious and healthy meal!

Ingredients

Method

  1. Heat the oil in a large fry pan over a medium high heat. Add in the garlic and sauté for 2 minutes or until fragrant.
  2. Add in the asparagus and peas and sauté for 3 minutes. Next add in the cherry tomatoes, baby spinach, chilli and dukkah and sauté for 2 minutes or until the spinach has wilted. Season well with salt and pepper. 
  3. Add in the zucchini noodles and stir well to combine. 
  4. Turn off the heat and divide between two serving bowls. Top with a squeeze of lemon, shaved parmesan and an extra drizzle of olive oil.
Serves 2.
