Peach and Buffalo Mozzarella Salad

 

Serves 4

Ingredients

  • 2 peaches
  • 1 tub of buffalo mozzarella
  • 15 fresh basil leaves
  • 1/2 lemon, juiced
  • Extra virgin olive oil
  • Salt and pepper

method:

  1. Cut peaches into bite size wedges. In a large bowl add peach, basil, squeeze of lemon, drizzle of extra virgin olive oil and season with salt and pepper.
  2. Place into serving dish, tear mozzarella over the top. Drizzle again with extra virgin olive oil and pepper.
