Osso Bucco

Osso bucco translates as 'bone with a hole.’ It’s traditionally cut from veal shin. However, beef osso bucco is also available. To get the best flavour, make sure there is plenty of meat around the bone and the yellowish marrow is present in the centre of the bone.

There are two versions of osso bucco: osso bucco bianco is made with white wine and veal stock and flavoured with a hint of cinnamon, the other version is perhaps more familiar, made with sauteed carrots, onions and celery and cooked with tomato puree. Both are good!

Osso bucco is traditionally served over saffron flecked risotto, polenta or creamy potato mash works just as well.

Making Osso Bucco with Gremolata...

PREPARING THE OSSO BUCCO...

One meaty piece of osso bucco is all you need per person. Plus perhaps two or three extra pieces…osso bucco makes great leftovers.

Cooking it in a roasting dish in the oven is a great way to cook it for a crowd. The meat will cook slowly and evenly.

  • Saute a large diced carrot, onion and three sticks of celery in a large roasting dish.
  • Brown the osso bucco pieces and place them over the vegetables.
  • Add a few bay leaves and a few large sprigs of rosemary.
  • Add 1-2 cup each of rich stock and white wine. Liquid should just cover meat and veggies.
  • Cover the baking dish with foil and tuck the edges tightly around the dish.
  • Cook in a slow oven for 2-21/2 hours.
  • Check every 30 minutes or so, top with more stock as needed. Turn the osso bucco a few times so they cook evenly.
  • When they are ready to enjoy, the meat should be very tender, falling from the bone.

MAKING THE GREMOLATA...

Finely chop fine strips of lemon rind (from one large lemon) one peeled garlic clove and a half bunch of flat-leaf parsley. Season with salt flakes and ground black pepper. You can be generous with the lemon zest and parsley

Serve osso bucco over hot, mashed potato or buttery polenta. Spoon over the pan juices and sprinkle with the gremolata.
