To open a pea pod, gently pry open the join of the pea using your thumb or finger to reveal the peas of the pod, run your finger down the middle to release them from the shell. Peas are a good source of protein, iron, zinc and vitamin C.They're great raw in salads, or cooked quickly to retain their texture in pasta dishes, stir-fries, risottos, fritters or as fantastic side whole or mashed.
